Cadillac

Château Fayau is a charming “chartreuse” style house surrounded by vines in the centre of Cadillac. Most of its wines are produced on the hillsides overlooking the town. The Medeville family acquired the property in 1826 but the winemaking tradition goes all the way back to 1711. Château Fayau is the centre of the vignoble Médeville and controls overacres of vines.

Harvest
A delicate harvest by hand with numerous successive selections as “botrytis cinerea,” the famousrot, appears.

Vinification
In new oak barrels by daily harvest batches after very careful pressing and settling.

Tasting notes
It is a deep golden yellow colour. Its nectar reveals a complex nose; candied fruit notes and aromas of soft spice. Having a full-bodied texture with a certain freshness, this is a subtle and delicate wine

Suggested dishes
A good match with warm lobster and mango coulis or deep fried breaded foie gras or gingerbread.
